Bollinger's PN series explores different expressions of 100% Pinot Noir. TX17 is based on the 2017 vintage, principally from Tauxières in the Montagne de Reims, supplemented by Avenay and Verzenay and reserve wines from magnums stretching back to 2006. Dosage is just 4g/L and maturation is twice the minimum required by Champagne regulations.

What it’s like

Palate

A fascinating combination of maturity and energy: dried flowers, tobacco, mocha, liquorice and dried fruit on the nose; apricot, peach, exotic fruit, honey, walnut and spice on the palate. Saline acidity keeps everything fresh, finishing with red fruit, cassis and citrus zest.

This is where Champagne gets interesting. 100% Pinot Noir, but instead of chasing a famous vintage name, Bollinger is showing you what Tauxières tastes like. More savoury and complex than your straightforward party Champagne — tobacco, nuts, fruit, spice, quite a lot going on. S$192 and definitely one to drink with food. Peking duck? I wouldn't say no.
