Dom Pérignon is produced only as a vintage Champagne, from Pinot Noir and Chardonnay. The 2002 growing season finished with exceptionally favourable conditions before harvest, allowing healthy grapes to reach excellent maturity. The resulting wine has developed considerably with more than two decades of bottle age.

What it’s like

Palate

Mature and complex, moving from almond and ripe fruit into candied lemon, dried fruit, smoke and toast. The palate is dense and creamy, with considerable length and a gently bitter, savoury finish.

2002 Dom Pérignon with more than 20 years behind it — this is no longer just Champagne for making a toast. Sit down and actually drink it with food. You get all those mature toasty, nutty flavours coming through. At S$550 this is obviously a special-occasion bottle, but please don't serve it freezing cold and finish it in ten minutes. Give the fellow some respect. 😂
