P2 — Plénitude 2 — isn't simply an older bottle of regular Dom Pérignon. A limited quantity of each vintage is retained for much longer maturation on the lees before later disgorgement. Dom Pérignon describes this second stage as a deeper, longer and more intense expression of the original vintage. The 2004 combines Chardonnay and Pinot Noir and benefited from a remarkably harmonious growing season.

What it’s like

Palate

Pink grapefruit and blood orange develop toward fig, cocoa, mocha, brioche, honey and roasted notes. Despite the maturity, there's considerable freshness and tension, with a precise texture and long liquorice-tinged finish.

S$870 — so first question: why so much more than the 2002 Dom? Because P2 is a different proposition. They kept the 2004 ageing much longer on its lees before releasing it, so you get maturity but also remarkable freshness and energy. This is for somebody who already likes Dom and wants to see what happens when you take it another level. Definitely not the bottle for mixing with orange juice at brunch. 😱
