Éphémère is a small Champagne project involving Frédéric Savart, Champagne Drémont and a group of wine-industry friends. Éphémère 017 is 100% Pinot Noir from the Grand Cru villages of Bouzy and Ambonnay, two important Pinot Noir territories in the Montagne de Reims. It is produced with a very low dosage of around 2g/L, giving it an Extra Brut style.

What it’s like

Palate

Fine bubbles and vibrant acidity, with citrus and white flowers moving into brioche, subtle red fruit, toast and a saline/mineral character. More textured than a Blanc de Blancs but still driven by freshness.

Monster Notes

Don't let the Champagne terminology frighten you. Blanc de Noirs simply means white Champagne made here from Pinot Noir. So compared with the Lilyale above, this has a bit more body and texture. Savart has a serious following among Champagne people, and at S$141 this is something much more interesting than just buying another famous label everybody knows.
