By producing a zero-dosage champagne, the house is emphasizing the natural quality of the grapes, the distinctiveness of the Grand Cru vineyards, and the winemaking process itself without relying on sugar to balance the flavor. This approach is meant to showcase the authenticity of the terroir and the skill of the winemaker, offering a wine that is as close to its natural state as possible.

Blanc de Blancs: This means the champagne is made exclusively from white grapes, specifically Chardonnay. Blanc de Blancs champagnes are known for their elegance, finesse, and often a more vibrant acidity. Chardonnay brings freshness, minerality, and lightness to the wine, which makes it a favorite for aging and pairing with delicate dishes.

Grand Cru: The grapes used for "Lilyale" come from Grand Cru-rated vineyards, which are recognized as the highest-quality vineyards in Champagne.

REFERENCE TASTING NOTE:

Chardonnay from three grand cru villages in the Côte des Blancs, this tense mineral wine is bone dry with citrus and apple crispness. It is tight and nervy, still young and needing to age further. This will be ready to drink from late 2018.
