100% Pinot Noir sourced from several top-shelf parcels—En Bully, La Grande Corvée de Bully, and En Foigery—planted between 8 and 41 years ago in the rolling terroir of Hautes-Côtes de Beaune. This is all-natural, artisanal realness. Hand-harvested fruit goes straight into fermentation whole-bunch—yes, that means stems included—with zero SO₂ until bottling.
A complex and floral bouquet—think cherry, coriander leaf, rose petals, with a slight medicinal/mystical twist. Sharp, fine attack that melts into depth. The palate delivers fresh red fruit, backed by whispery tannins and subtle oak that plays a supporting—not dominating—role.
Imagine a Burgundy Pinot with a “less is more” attitude—balanced, elegant, focused, and effortlessly lovely. No flamboyant oak staging here; it’s a finesse flex. Very digestible now, but bottles will only glow up further over the next 5–6 years
Pairs like a dream with duck carpaccio, Asian-seasoned cod, or softly spiced roast poultry—just don’t overshadow that elegant Pinot magic.
